Preparation – 20 minutes and cooking time – 10 minutes.
To make this delicious stir fry you will need:-
800gms thinly sliced pork fillet strips rubbed with enough cornflour to coat – usually about 2 tablespoons
2 tablespoons stir fry or peanut oil
300gms of red, orange and yellow peppers cut into thin strips
1 large carrot in ribbons – peel and then using the vegetable peeler – run down length of carrots, shaving off long ribbons
150 gms tender stem broccoli
1 medium red onion chopped
2 tablespoons light soy sauce
2 tablespoons tomato sauce
2 tablespoons white wine vinegar
1 tablespoons soft brown sugar
2 cloves of garlic crushed
Approximately 80 mls water
2 large peaches cut into wedges
- Heat half the oil in the wok and stir fry the pork until nicely browned – depending on the size of your pan you may need to this in batches. Remove the pork from the pan.
- Pour the remaining oil into the wok and heat. Stir fry the peppers, onion, carrot ribbons and broccoli florets until tender.
- Return the pork to the wok along with the sauces, vinegar, sugar, garlic and 60 mls water.
- When the Pork is cooked add the peaches and stir fry till they are hot – adding more water if the sauce is too gloopy – although gloopy is good as it needs to coat the food.
Serve with rice or noodles
Just out of interest one medium peach provides 6% of your daily vitamin A needs, 15% of daily vitamin C and also contains 2% or more daily value of vitamins E and K, niacin, folate, iron, choline, potassium, magnesium, phosphorus, manganese, zinc and copper!
