Pork Steaks with a Mustard Sauce 


2 Pork Steaks (Chump, Leg, Loin or Chops), 25g Butter, 1 Tablespoon of Oil, 2 Cloves of Garlic, 125ml White Wine, 125ml Cream, 2tsp Wholegrain Mustard, 2tsp Dijon Mustard, 8 Cornichons and Salt and Pepper


  • Season the Pork Steaks with salt and Pepper
  •  Melt the Butter and add the Oil to a medium to high heat pan 
  •  Flatten the Garlic and Add to the Pan with the Steaks 
  •  Brown Both Sides of the steaks until 72°C Internal Temperature (Not Pink, Just Cooked)
  •  Remove Steaks and Keep Warm 
  •  Pour the Oil from pan and add the wine and deglase the sticky sediment 
  •  Add the Cream and Stir 
  •  Add the Mustards and Cornichions
  •  Stir In and Simmer for 1 minute 
  •  Check For Seasoning
  • Pour over Steaks and Serve
