Pork Steaks with a Mustard Sauce
Ingredients
2 Pork Steaks (Chump, Leg, Loin or Chops), 25g Butter, 1 Tablespoon of Oil, 2 Cloves of Garlic, 125ml White Wine, 125ml Cream, 2tsp Wholegrain Mustard, 2tsp Dijon Mustard, 8 Cornichons and Salt and Pepper
Method
- Season the Pork Steaks with salt and Pepper
- Melt the Butter and add the Oil to a medium to high heat pan
- Flatten the Garlic and Add to the Pan with the Steaks
- Brown Both Sides of the steaks until 72°C Internal Temperature (Not Pink, Just Cooked)
- Remove Steaks and Keep Warm
- Pour the Oil from pan and add the wine and deglase the sticky sediment
- Add the Cream and Stir
- Add the Mustards and Cornichions
- Stir In and Simmer for 1 minute
- Check For Seasoning
- Pour over Steaks and Serve
