Pork Stir-Fry
Serves 4 – 250-450g of thin strips of lean pork (leg or fillet is good)
1tbs Oil
Cook the meat in a wok or a frying pan for about 3-5 minutes until cooked through then place on a warm plate or bowl
Add a bit more oil to the pan and fry your choice of the vegtables from the list below:
Chillies Chopped and Deseeded
Courgette in thin slices or sticks
Carrots in thin slices or sticks
Spring onion sliced
Peppers sliced
Mange tout
Chopped garlic
Thinly sliced fennel
Thinly sliced ginger
Thinly sliced mushrooms
Baby corn
Green beans
Young broad beans
Season with pepper and soy sauce and add meat for 1 minute and serve
